蜂蜜中最富营养价值的成分是活性酶,但活性酶对高温的耐受性非常差,例如温度超过60度时少数活性酶会失去活性,温度超过80度时蜂蜜中大部分酶类会失去活性,而温度达到100度时蜂蜜中基本就没有活性酶,因此蜂蜜水不能用开水冲的根本原因是防止活性物质失活而降低营养价值。
