1、掺水和面时,不要使用凉水,使用93度左右的水来和面,越揉面越劲道,且饺子煮后(或蒸后)皮子是透明的。

2、要使饺子皮筋道且透明,最好的配方为:小麦淀粉、土豆淀粉=(1:3到1:1.2),滚水和面,加一点盐。做出来晶莹透明,可看到馅的颜色,吃起来软糯可口。

3、93度是个大概温度,简便的办法可以知道水温是否合适!即烧水至听到水响,并有一颗颗小气泡附在锅边时(即俗称的“沙眼水”),就可以关火了,加一点盐和蛋清可改善口感。
