1、大肠在腌制的时候放2克的食用碱就可以了,再加上两勺盐、两勺白酒,能很好的去除大肠的腥臊味和肥油,大肠在炒之前需要先焯水煮1分钟。

2、捞起后放入冷水中浸泡,炒的时候用大火爆炒几分钟就可以,这样炒出来的大肠口感才比较脆。
