1、备好材料,猪腱肉汆水,淮山去皮切块,姜块拍扁,与瑶柱一同下锅熬煮20分钟,做成汤底;

2、走地鸡对半开,洗干净去除内脏血水和杂毛;

3、快速汆水洗去血污;

4、鸡放入熬煮好的汤底中慢火浸熟;

5、鸡肉刚好熟,马上捞出晾凉,让鸡皮充分收缩变脆,斩件;

6、把汤底煮开,滑入斩件的鸡块,即完成「瑶柱浸鸡」。
