要泡。绿豆中富含蛋白质、脂肪、碳水化合物、钙、磷、铁、维生素A、B、C。磷脂成分中有磷脂酰胆碱、磷脂酰乙醇胺、磷脂酰肌醇、磷脂酰甘油、磷脂酰丝氨酸、磷脂酸。

绿豆籽粒含蛋白质24.5%左右,是禾谷类的2~3倍,其中人体必需的8种氨基酸含量在0.24%~2.0%之间,是禾谷类的2~5倍。含淀粉约53%,脂肪1%以下,纤维素5%。绿豆还含有丰富的B族维生素和矿物质等,其中维生素B是禾谷类的2~4倍,且高于猪肉、牛奶、鸡肉和鱼;钙是禾谷类的4倍,鸡肉的7倍;磷是禾谷类及猪肉、鸡肉、鱼、鸡蛋的2倍。因此,绿豆常被称为“绿色珍珠”。
