潮汕鱼皮饺子制作方法

1、将水发海米、水发香菇、韭黄切成末和猪肉末合在一起,加香油、姜末、盐、酱油调制成馅;

2、鲶鱼宰杀,去内脏,片取净鱼肉,用刀剁成细茸;

3、鱼茸在案子上摔上劲,用干淀粉作扑面,揪成20个剂子;

4、用小擀杖将剂子擀成饺子皮;

5、饺子皮内包入肉馅,封口捏成鸡冠形;

6、锅内加水烧开,放入饺子,用中火煮熟捞放汤盘内;

7、锅内另加鸡汤750毫升烧开,加盐、酱油、味精、料酒、淋鸡油,浇入汤盆饺子内,放香菜、紫菜即成。
