“腊八蒜”制作过程不见阳光,产生的绿色并非叶绿素,而是大蒜绿色素。“腊八蒜”的绿色素实际上是由一种先生成的蓝色素和一种后生成的黄色素组成。产生色素的转变过程是,先产生蒜蓝素,再转变为蒜绿素。在大蒜加工过程中,国内外都有蒜泥变绿的报道,产生的绿色素也不是常见的叶绿素,与我国传统食品“腊八蒜”中的绿色素成分相同。
