冷水。冷水小火烧一小会便开始下丸子,下好之后不要用铲勺搅动,再转大火烧开即可。氽丸子是一道色香味俱全的名肴,属于鲁菜系。此鲜嫩清淡,汤色洁白。把玉兰片切成小象眼片,木耳撕开备用,先将肉剁成肉泥,然后放入葱、姜末、鸡蛋清、精盐、淀粉,用筷子顺一个方向打上劲,待馅发出噗噗声时,则迅速挤成如枣大小的丸子;并放入七成熟的水锅内,同时用旺火烧开,待丸子浮起后,即放入玉兰片、木耳、盐、黄酒、酱油、味精、撇去浮沫,盛入汤碗内,淋上香油即成。
