水浴法就是将调好的蛋糕糊倒入模具后,将模具放在烤盘上,烤盘中注入1到2厘米深的热水,这样在烤的时候,水的温度不会到100度,可以保证糕体不会被烤得很干很焦,烤箱中湿润,蛋糕的口感柔软好吃。如果用的是活底的模具,要用锡纸包住模具后再注水,否则水会进入到蛋糕糊糊中。
