板鸭的制作方法和配方

1、配方:光鸭50千克,食盐1.5~1.8千克,料酒1千克,香辛料(八角、小茴香、桂皮、陈皮、丁香、生姜、花椒等)适量。

2、工艺:将剖腹后光鸭放入清水泡洗干净后沥去水分,剁去双脚和双翅,用部份食盐擦遍鸭体,放入腌缸内。锅内放适量水,加入剩余食盐及其余辅料烧开,冷却后倒入盛光鸭的腌缸内,上面压以重物,使鸭体浸泡在卤液中。浸泡3~4天后捞出鸭体,沥去汁液,再用细绳拴住鸭头,挂在通风处吹干,也可入烘房用60℃左右温度烤至半干。最后入熏炉熏烤30~60分钟即为成品。
