较为稀薄的芡汁。分为流芡和米汤芡。流芡要求芡汁既与主料交融,又呈流态,食之利口;米汤芡粉质最稀,勾芡后使汤汁浓度增加,又叫奶汁芡。

勾芡就是在菜肴接近成熟时,将调制好的粉汁淋入锅内,使汤汁稠浓,增加汤汁对原料附着力的一种技术。勾芡的粉汁是用淀粉和水调制的,经加热淀粉发生糊化,并吸收汤中的水分,形成具有粘性并光洁滑润的芡汁。
