面筋简介面筋是植物性蛋白质,由麦醇溶蛋白和麦谷蛋白组成 。将面粉加入适量水、少许食盐,搅匀上劲,形成面团,稍后用清水反复搓洗,把面团中的淀粉和其它杂质全部洗掉,剩下的即是面筋。油面筋用手团成球形,投入热油锅内炸至金黄色捞出即成。将洗好的面筋投入沸水锅内煮80分钟至熟,即是水面筋。
