正确米酒二次发酵

1、将原料糯米洗净。蒸煮成熟米;冷却。将主要含根霉菌的小曲和水加入熟米,发酵成酒醪。

2、原料大麦为糯米量的60~100%;用30~40℃热水浸泡大麦约4小时,使麦粒充分吸水膨胀。

3、蒸煮,冷却,加入糖化剂;压榨取得糖化液;将所得糖化液与上述糯米酒醪合缸,加水使糖度稀释到7~10°,接入酒曲或耐酒精酵母菌。

4、在20~25℃发酵13~17天,使糖分充分转化成酒精;出酒。
