鸭胸肉卤制方法

1、鸭胸肉洗净沥干。用盐、蒜头腌好腌二小时以上。用一锅开小火,别放油。把鸭肉放入锅中皮朝下慢慢煎熬,煎至皮色金黄翻一面略煎一下捞出,(火一定要小,像熬猪油一样慢慢地煎、熬)。煎出的油脂倒掉,锅清洗干净。

2、鸭肉切片。别弄乱!锅中倒入适量的老抽、清水、十八鲜、砂糖烧开,把鸭肉片齐码入锅中,用铲子铲起卤汁淋在鸭肉上,反复数次。待汤汁淋遍全部鸭肉,鸭肉上色后即可。
