2、使用高筋面粉或者低筋面粉是根据面粉种蛋白质的含量多少来决定的。

3、因为高筋面粉的蛋白质含量平均在 13.5%,蛋白质含量比较高, 麸质也较多,因此筋性亦强,多用来做面包,面条等。而低筋粉蛋白质含量只有6.5-9.5%,所以适合做蛋糕、饼干、蛋挞等松散、酥脆、没有韧性的点心。
