腊羊肉的腌制方法

1、主料:羊肉(瘦)5000克。调料:酱油100克,白砂糖100克,丁香3克,黄酒50克,花椒8克,盐150克。

2、选羊的鲜硬肋肉,切成长30厘米、宽5厘米的长条。

3、腌制:食盐放入锅内炒干,再研成碎末,和花椒混拌,撒在羊肉条上,搓揉均匀,置于缸中腌制2天,再加酱油、绍兴酒、白糖腌制7天,中间翻倒2次,使之腌透。

4、腌好的羊肉条,出缸,挂在竹架上,晾干,即为成品。食用时将腊羊肉刷洗干净,煮蒸皆可,但火不宜过大,肉熟即好。
