炸紫酥肉做法图解

1、制作材料:肋猪肉,葱片、姜片、花椒、八角(掰碎)、精盐、黄酒、味精。

2、将带皮硬肋猪肉切成6.6 厘米宽的条,放在汤锅内旺火煮透捞出;煮过的肉把皮上的鬃眼片净后放盆中;

3、治净的肉用葱片、姜片、花椒、八角(掰碎)、精盐、黄酒、味精、加入适量水,浸淹2 小时,上笼用旺火蒸至八成熟取出,晾凉;

4、炒锅置旺火上,加花生油,烧至五成热时,肉皮朝下放入锅内,随即将锅移到微火上,10 分钟后捞出;

5、在皮上抹一层醋,下锅内炸制;如此反复3 次,炸至肉透,皮呈柿黄色捞出;

6、切成0.6 厘米厚的片,皮朝下整齐码盘;上菜时外带葱段、甜面酱。
