1、首先要处理干净鱼,注意去掉鱼的黑膜,以免炖的时候口感不好、很腥,还要将血水洗净。

2、炖之前可以先把鱼在锅里煎一下,前提水分一定要晾干,以免溅油,这样不仅可以让鱼肉更完整,还可以保留它的营养价值,在炖的时候,用开水比冷水炖的口感要好。
