德宏傣族的牛肉圆子制作方法:

用料:鲜牛肉、精盐、味精、清水、生粉。

将鲜牛肉切薄片,用圆形小铁槌捶烂,加清水、精盐、菱粉拌匀,打成牛肉胶。用手将牛肉胶搓成丸形,放进锅中,加清水,用文火浸熟取出,以水清,丸浮不面为准;要求牛肉必须新鲜,否则没有胶质,捶不烂也易出水,制成的牛肉丸便不爽滑;牛肉丸要用文火浸熟,如用武火不断沸滚,会使牛肉丸变韧。
