造成这种情况有2种可能,如下:

1、排骨没有经过焯水即在开水锅中加热至半熟取出,直接熬煮;未焯水导致熬煮后血水渗出,血水导致排骨汤发黄;

2、调味品葱姜放多导致排骨汤发黄,原因:葱的叶绿素被高温破坏使汤呈现黄色;姜中含有黄色素,加热后,溶于汤中使汤呈现黄色。
