发酵粉的主要成分为碳酸氢钠和酒石酸,平时是固体混合物,无水和常温时不发生反应。受热时,碳酸氢钠分解,生成碳酸钠和二氧化碳以及水。二氧化碳是气体,使面团膨松,但碳酸钠是碱性的,所以要用酒石酸来中和,碳酸钠与酒石酸反应,生成酒石酸钠和二氧化碳。二氧化碳多了,面团更膨松。酒石酸钠没什么味道,但偏碱性。

一般发酵粉中酒石酸与小苏打的配比是经过计算的,酒石酸稍稍多一点,用来中和酒石酸钠的弱碱性,这样一来,蒸出的馒头膨松可口,不酸也不碱,正好。
