腌的酱菜如果是单独用盐卤制的话,保存时间是3个月左右,时间太久了建议不要吃;如果是配合其他调料腌制的酱菜,腌制完成后,建议冷藏保存并一周内食用。

为防止腌菜生白霉应当注意盐水用量要适当。食盐不仅给腌菜以咸味,而且有防腐作用。加盐量视蔬菜品种而定。一般夏季用盐量为腌菜量的20-25%,春秋季节为15-20%,冬季为10-15%。另外,在盐水表面放几瓣去皮大蒜,可有效地防止腌菜生白霉。
