冷水。蒸肉饼如果热水下锅蒸,最外层的肉泥会很快成熟,但里面的肉泥还没有熟。等整个肉饼熟后,最外层的肉会较为干硬,口感不好。而如果冷水下锅蒸,随着水温升高,肉饼内部也会逐渐加热,而且这样加热肉饼熟得更加均匀,口感也更好。

做肉饼用哪个部位的猪肉:猪后颈两块骨头间半肥半瘦的一块肉最好。因为蒸肉饼需要有肥有瘦的肉,也就是常说的五花肉,这样的肉非常适合用来剁碎,做肉饼、肉丸、馅料,口感上佳,如果用的是其他部位的肉,会因为过肥而觉得肉饼油腻,或是因为过瘦而嚼着干硬不够软滑。
