如何做压板肉

材料:猪后肘或前肘,葱段,姜片,大料1个,料酒,盐,白糖,肉芤

做法:

1、把猪肘剔骨提前用盐、白糖、料酒葱姜先淹一夜;

2、用沙锅把淹好的肘子放水、料酒、盐、大料、葱姜、一点白糖、肉芤煮熟;

3、煮至7成熟时关火,在汤里泡3--4小时让它入味;

4、这是最关键的一步,捞起肘子,把皮向外卷好,外面再卷一层蒸馒头用的纱布,卷紧紧的用线捆紧,外面还可以裹一层保鲜膜,这样比较卫生;

5、将一层层裹好的肘子放在不锈钢的平盘里,上面压上一个特别重的大石头8--10小时;

6、把压好的肘子解开,用刀切成薄片,调上蒜泥、生抽、醋、香油蘸着吃。
