1、加油可以使米汤色泽鲜亮,而且入口别样鲜滑。

2、为了使米汤不会溢出来。因为米里含有淀粉,淀粉在沸腾的时候会产生泡沫,就会溢出。加了油后,油使得淀粉的粘性不再,因此不溢出。

3、去除米汤表面除维生素以外的浓质。
