电热水壶接通电源加热后,水温逐步上升到100度,水开始沸腾,蒸汽冲击蒸汽开关上面的双金属片,由于热胀冷缩的作用,双金属片膨胀变形,顶开开关触点断开电源。如果蒸汽开关失效,壶内的水会一直烧下去,直到水被烧干,发热元件温度急剧上升,位于发热盘底部的有两个双金属片,会因为热传导作用温度急剧上升,膨胀变形,断开电源。
