煎饼要放发酵粉吗

煎饼不需要发酵粉。传统的煎饼是小麦经水充分泡开后,碾磨成糊状,摊烙在鏊子上成圆形而成,旧时多由粗粮制作,现多用细面和水调成面糊制作。烙成饼后水分少较干燥,形态似牛皮,可厚可薄,方便叠层,口感筋道,食后耐饥饿。

发酵粉是一种复合添加剂,主要用作面制品和膨化食品的生产。发酵粉中含有许多物质,主要成分为碳酸氢钠和酒石酸。通常是碳酸盐和固态酸的化合物。当碳酸盐与水和酸接触时,离解成几种物质。这个过程中,二氧化碳释放,但不产生风味物质。因此产品的味道不会受到影响。
