干红可以加糖,酿酒用的葡萄一般每百克内含糖13至15克,每克糖经发酵后能产生0.6度左右的酒精,因此单靠葡萄本身的糖只能酿出8至9度的酒,如需酿造出12至15度的干红葡萄酒,需要外加糖。工业上每百克葡萄汁加糖约4至5克,并分成二次加入,这样酿出的酒约为10度酒精度,然后用其他工艺再提高干红葡萄酒酒精度。
