烤蛋糕总是发不起来主要原因就是蛋清打发不足,当然还有泡打粉的关系。如果蛋清总是打不好的话,就在打蛋白之前加一点小苏打或塔塔粉,一点点就好了。另外,还有点烤箱一定要事前预热。这点很重要,尤其是做蛋糕。因为蛋白很不稳定。往往前面刚打好,后面底下就又消泡了。所以,预热很重要。
