芥兰贝壳饺做法图解

1、食材准备:小米面100g,面粉20g,水65g左右,面筋粉20g,胡萝卜20g,芥兰叶110g,大豆拉丝蛋白块56g,糖1茶匙,胡椒粉少许,橄榄油适量,盐少许,香菇调味粉2茶匙。

2、将粉类混合均匀;把水一点点倒入粉中,搅成小块;揉成粗面团;

3、醒1小时以上再揉成细润的面团;因为小米面是粗粮,需要长些的时间来吸收水分。通常猫妈都是在头天晚上和好粗粮面团,冷藏到第二天来用,再揉就非常细腻光滑了。

4、将面团揉搓细长,预备切剂擀皮;

5、芥菜叶焯软过冷沥干切碎;胡萝卜切碎;大豆蛋白块泡软攥干;

6、将大豆蛋白块切碎入菜料混合,加入调味料拌匀;饺皮填馅备包;

7、饺皮上下对折,中间捏合;再把左右对折,中间捏合;

8、上下两头对齐,捏紧;靠下部分捏合;靠上部分也捏合;

9、稍加整理即成贝壳饺;包好后底部稍粘粉放置以防粘连;

10、开水锅下饺子,转中火,开后点一小碗冷水,煮飘浮鼓起至熟即可。
