酱板鸭的卤水配方:

材料:

草豆蔻20克,肉豆蔻20克,丁香5克,35克,白芷5克,良姜30克,20克,25克,山楂片香叶35克,甘草10克,草果25克,15克,上等红曲米150克、生抽200克、酱油50克、蚝油200克、冰糖1500克、盐750克、味精350克、料酒500克、鸡架骨1500克,猪大骨1500克、生姜片150克,生葱100克,香菜、香芹、青椒、洋葱各50克;

步骤:

1、锅内放入色拉油,烧制七成热时放入生姜片、生葱香菜、香芹、青椒、小火煸炒30分钟至出香;

2、锅内放入鸡架骨,猪大骨,清水。大火烧开后小火熬20分钟,取出;

3、将各种香料用纱布包起制成料包,放入步骤一熬后的汤中小火再熬2小时;

4、捞出料包、鸡架骨、猪大骨,放入生抽酱油、耗油、盐、味精、料酒调味即成。
