酥油制作技巧

1、首先要将牛奶或羊奶稍加热,然后倒入专门打制酥油的木桶中,桶里有长柄活塞,藏语称为“甲罗”。活塞比木桶内壁稍小,可以上下自由活动。

2、奶倒入木桶后,即用“甲罗”用力上下搅动近千次,奶中的油水即自行分离,油浮在上面,用手捧出,灌进椭园形或长方形皮口袋中,冷却后即成为块状酥油。牛奶打制的酥油呈黄色,羊奶打制的酥油呈白色。

3、这些酥油制成后即可保存起来随时食用或外运出售。制酥油后剩下的水可以饮用,也可制成“曲拉”(即奶渣)等奶制品食用。在牧区,也有的将奶倒入陶罐中,反复摇动制成酥油。
