自制肠粉很粘和用水比例有关,一斤米粉两斤水,适量生粉搅匀过虑再放适量油(按这个比例,油不要超过30克),盐不超过10克。也有可能是米浆磨的过于粗糙,粗浆比较难蒸熟,不熟就易粘。

用米粉60-70%,新米粉60%即可,木薯淀粉40-30%加水搅拌,能在碟内自由布满再放进开水锅里猛火蒸熟就可以了。如肠粉就象粉巴一样不成形,估计米粉太稠或缺少木薯淀粉缺乏粘性所致。
