白菜回锅肉做法步骤详解

1、主料:大白菜(小白口)350克;辅料:猪肉(瘦)100克;调料:豆瓣酱20克、酱油5克、白砂糖5克、味精2克、料酒5克、淀粉(豌豆)10克、猪油(炼制)40克、大葱10克、姜10克。

2、做法:将白菜洗净沥水,抹刀片成片;猪肉洗净切成2.5厘米长、1.5厘米宽的片;豆瓣酱剁碎;锅内加油烧热,放入豆瓣炒至红色,加入料酒、酱油、葱末、姜末、白糖、白菜片煸炒;放入肉片、鲜汤烧透,加味精,用湿淀粉15克(淀粉10克加水)勾芡,淋入明油,出锅装盘即成。
