绝味鸭心的配料或做法

一、食材:袋装冰鲜鸭心500克,干辣椒400克,姜块100克,葱节120克,八角20克,三奈10克,桂皮8克,小茴香10克,草果10克,花椒10克,丁香5克,砂仁8克,豆蔻12克,排草5克,香叶3克,精盐200克,味精15克,硝盐1克,红曲米50克,料酒100克,鲜汤5000克,精炼油2000克。

二、具体做法:

1、鸭心解冻,冲洗干净后,加入姜块50克,葱节50克,精盐100克及料酒,硝盐拌和均匀,腌渍码味约12小时,取出,用清水洗净;

2、净锅上火,放入精炼油烧至三成热,下入干辣椒节,香辛料及剩余的姜块,葱节稍炒,掺入鲜汤及红曲米水,调入精盐,味精烧开后,改小火熬煮2小时,即成辣味卤汁;

3、把加工好的鸭心放入烧开的辣味卤汁里,用中火卤10分钟即可关火,让鸭心继续在辣味卤汁中浸泡20分钟,随后捞出晾凉即可食用。
