炸油饼的油老起泡。毛油、四级油等含磷脂较高的油脂,在煎炸时易起泡沫。其原因是磷脂极易吸水,且磷脂本身是一种良好的表面活性剂,使油水乳化,产生丰富的泡沫。精炼油因为已经基本去除磷脂,所以几乎无此现象。你的油饼面里食用碱,起子含量过高,经过多次使用油内含有水分,使用中添加新油即可解决。
