1、是手把勺耳或把的部位处稍低一些,使原料自然向前滑动。

2、再将勺前推出去,而后猛拉回,是锅中的原料在惯性的作用下顺勺抛出向后滑落下,这样就使原料翻过来。

3、在翻锅时需要右手的配合,右手握住手勺紧贴勺底面推住原料的后端向前推,使原料抛起,然后落入锅中。
