1、将一斤干豆磨出8点5到9斤浆,先将第二遍浆和第三遍浆混合一起煮,不要煮开,煮到85度到90度之间,停止加热出锅;

2、将第一遍生浆(生浆比较浓)与出锅的浆液混合,冲匀后用凝固剂冲之;

3、蹲脑15分钟左右上框,上满眶压下一半,油炸豆腐坯的含水量介于豆腐和豆腐干之间;

4、油炸豆腐坯的含水量是介于豆腐和豆腐干之间;

5、豆浆的浓度与制豆腐干的浓度相同,滤浆后待浆温降至80摄氏度左右时加入凉水,降至70摄氏度时点脑;

6、每100千克豆浆加入凉水10千克、苏打100克、用卤水点之;或豆浆中不加苏打,每100千克豆浆加入凉水15千克,用卤水点之;

7、下卤水要慢,翻浆也要慢;

8、点好脑后上模型压榨,压好后的坯子应表面亮无麻点,一斤干豆出两斤左右的坯子。
