烧鸭上色技巧

1、将挂好的鸭子用100℃的开水在鸭皮上浇烫,以使毛孔紧缩,表皮层蛋白质凝固,皮下气体最大限度的地膨胀,皮肤致密绷起,油亮光滑,便于烤制上色;

2、烫法:左手提握钩环,使鸭脯向外,右手舀一勺开水,先洗烫体侧刀口,使水由肩而下,封住刀口防止跑气,再均匀地烫遍全身;

3、往鸭身上浇洒糖水,使烤鸭具有枣红色,并可增加烤鸭的酥脆性。糖水系用饴糖50克,掺清水450克稀释而成。使用前烤鸭周身沾满糖水,用浇的方法打两次。然后,沥净膛内的血水,持在通风处晾干;

4、鸭子胸部有脂肪,上色比背部快。烂皮的地方补厚的脆皮水效果好,在风干后补上再风干;

5、腿部可以刷老抽或厚的脆皮水;

6、恒温下可以自行上色,只是比别的淡色些而已,背部色泽靠炉恒温以及配合炉火上色。
