1、由于全蛋在40度左右的温度下最易打发,所以需要在打蛋时将蛋盆放置在热水中加热;

2、加入低筋面粉的时候按量分为三四份,逐次加入,搅拌时应从下往上翻拌;

3、做好的蛋糊要有粘稠度,不能有大量气泡或者大的气泡;

4、蛋糕烤制时,时间不能过长,否则口感湿度不够;

5、蛋糕烘烤的时间取决于温度。
