原因:

面团弹性太大,烘烤时面筋挡住气体通道不易散出,使面团的内部起泡,从而使蔓越莓饼干内部过多气泡,导致结构疏松,一碰就碎。辊轧时面带上撒面粉太多,使得的面团湿润度不够,饼干烤制的过程中快速发生开裂,导致一碰就碎。调粉剂量不足或过头, 配方中膨松剂用量太少或太多,导致饼干的结构过于酥脆或韧性不足。解决办法:

应降低面团弹性,并用有较多针的模具或者饼干面团放进烤箱前使用针进行疏通排气。应尽量避免撒粉或少撒粉。应调整适量加入膨松剂。
