1、蛋白没打发到位;

2、混合面糊时要翻拌,不能划圈;

3、蛋白判断打发够不够还可以插一根牙签,立住了不动就打够了。

小贴士:

1、蛋白打发到干性发泡阶段;

2、大约五个蛋清配60g白糖;

3、蛋黄液与打发好的蛋清混合的时侯要上下翻拌;

4、蛋糕要用低筋面粉,或普通面粉里边掺入玉米淀粉,淀粉和面的比例为1:3;

5、出炉后,模具要倒扣晾凉。
