原料:鲜葱头5000克,盐1000克,白糖1000克,凉开水1000克,醋500克。

1、削去葱头须根,留2厘米长的葱梗,剥去干皮,清洗后入缸每5000克蒜头加250克盐,腌制1天;

2、加水撤去辣味,每天换水1次,连续4天,然后捞出蒜头,沥干水分,按每5000克的葱头加盐,白糖,凉开水,拌和,再入缸腌制,放阴凉处;

3、15天左右即成,一般在食用前5天加入10%醋浸泡食用。
