绿豆含有大量抗氧化成分,如类黄酮等,经过加热后分离到汤里,与空气接触后发生氧化,汤颜色会变成红色。使用铁锅煮绿豆汤导致,因为绿豆中的抗氧化类成份黄酮与铁金属离子发生反应,生成金属铁的络合物,使汤汁变成红色。煮汤用的水硬度较高,含有的金属离子与抗氧化类成份黄酮发生反应,生成金属铁的络合物,使汤汁变成红色。
