原因可能有两种。

1、泡制时间过长,腌制植物发生无氧呼吸,而无氧呼吸产物为酒精,因此做出的酸萝卜会含有酒味;

2、细菌污染,制作过程不卫生使腌制植物被污染从而引入细菌,其发挥化学作用产生酒精使酸萝卜带有酒味。
