因为鸡蛋的蛋白成分不是单一的,在加热后,先熟和后熟的自然会分层。

1、 鸡蛋白至少有3层,外层及内层都比较稀薄,中层约占全蛋白的65%,因为其中约含0.3%的纤维状粘蛋白,故较粘稠,而内外2层则含此种粘蛋白极少;

2、按水分和固形物所占比重,则含水分87%,固形物13%;固形物中大约90%是蛋白质,其中:卵白蛋白75%,卵类粘蛋白15%,卵粘蛋白7%,伴白蛋白3%。
