粤厨自制鹅肝酱做法

一、材料:

鹅肝550克、白糖5克、香醋45克、耗油15克。

二、做法:

1、鹅肝剪去筋膜清洗干净血水;

2、放入冷水煮开锅,开锅3分钟后捞出鹅肝,冲洗干净;

3、淖水后的鹅肝放入锅中,加入清水、10毫升料酒、葱、姜、八角、花椒、香叶等一起煮开锅,小火煮10分钟停火原汤冷却;

4、冷却后的鹅肝,放置菜板上用摩擦铲碾成泥;

5、把鹅肝酱压入模具,用抹刀抹平表面;

6、香醋和白糖搅拌均匀成无颗粒的糖醋汁;

7、最后加入15克耗油,搅拌均匀,耗油香醋汁就做好了;

8、用调料勺把耗油香醋汁浇到鹅肝酱上,这道菜就做好了。
