自酿葡萄酒加糖发酵,完全发酵后的酒精度可以达到16度。发酵后的酒精度越高,说明发酵的越成功,酒精度高了便于保存,发酵的酒精度过低,说明糖分没有利用完,这样的葡萄酒在保存期间容易浑浊长期不清。

酒精度低的葡萄酒往往意味着原料葡萄的含糖量很低,含糖量低则往往意味着葡萄里除了糖分,其他的风味物质也比较少,所以口味寡淡难喝是正常的。
