材料主料:嫩公鸡一只

调料:芝麻油20克、红油辣椒10克、芝麻面5克、花椒面2克、芝麻酱5克、口蘑10克、酱油10克、葱花10克、白糖10克、味精1克

做法:

1、鸡宰杀去毛,除去内脏,洗净,入沸水锅中煮一刻钟;

2、掺入半瓢冷水,待水再次煮开时,将鸡翻面再煮约10分钟,再掺入半瓢冷水;

3、待水烧开之后翻面,用小竹刺刺入鸡肉内,无血珠冒出时即可捞起,放入冷开水中浸泡1小时,取出晾干;
