怎样做的葱花饼又酥又软

1、和面,在碗中放入200克面粉,慢慢倒入120毫升温水,一边倒一边用筷子搅拌成絮状,用手和面,揉成较软的光滑面团,盖上保鲜膜,醒面30分钟。

2、调油酥,30克食用油中放入10克面粉,适量盐,搅拌均匀成油酥备用。将洗净的葱切沫备用。火腿肠切沫备用。

3、将醒好的面团分成三等份,揉成圆圆的面剂子,取出一个面剂子擀成圆饼,抹上油酥,撒上葱花,火腿丁。

4、在面饼切个口,沿边卷起来,最后成一个土堆状,边缘用手捏实封口。

5、从上往下将面团按成圆形,再用擀面杖慢慢擀成圆饼。

6、平底锅刷油,将擀好的圆饼放入平底锅里选中小火烙,面饼上刷油酥锁住水分,1分钟后翻面烙另一面,重复3次,烙至表面发黄出锅,砧板上切片装盘。
